This vibrant red from Chile’s Maule Valley is a true expression of resilience. Named after the nearby Descabezado volcano—and a nod to the winery’s recovery after devastating floods—this wine is made from ungrafted País vines over 200 years old, farmed biodynamically and worked entirely by hand (and horse).


The wine itself is light, energetic, and full of charm. On the nose, you’ll find cranberry, wild strawberry, rosehip, and a touch of bay leaf. The palate follows with cherry, pomegranate, and a gentle white pepper spice, all carried by lively acidity and a clean, mineral finish.


Fermented with native yeasts in open-top lagares and aged in old raulí wood foudres, it’s bottled without fining, filtering, or sulfur. What you get is an honest, living wine—unpolished, electric, and rooted in centuries of tradition. Slight chill recommended for max refreshment.

Kykao Reverse Engineered Beer

This sparkling amber jewel hails from Georgia’s Kakheti region, crafted from the indigenous Kisi grape—a natural cross of Rkatsiteli and Mtsvane. Hand-harvested and fermented on skins for 10 days in ancient Qvevri clay vessels, it undergoes a second, wild fermentation in the bottle, capturing the raw essence of place and time.

Bright and alive, the nose offers crisp orchard fruits, dried florals, and a whisper of earth, while the palate dances with lively bubbles, fresh acidity, and subtle mineral notes. This is a wine of purity—unfiltered, unfined, and untouched by sulfur—bottled to preserve every nuance of its natural, biodynamic birth.
